Asolo Prosecco Superiore DOCG Extra Brut by Graziana Grassini
The hilly area of "Montello" in the Municipality of Nervesa della Battaglia (TV). Tenuta Aria Valentina is located on the southern slope overlooking the surrounding plain, where the vines are exposed to sunlight all day and enjoy the cool evening breeze brought by the Piave River, which flows between Montello Hill and the Collalto and Susegana areas.
Medium-textured tending to clayey, with a typical reddish color derived from the presence of iron oxides.
Planted in 2008, the vineyard at Tenuta Aria Valentina is trained with a double Guyot system and has a density of 3600 plants per hectare.
Manual harvesting of the grapes in the early hours of the morning, cluster-by-cluster selection, gentle whole-bunch pressing in a nitrogen atmosphere using a “cremant” cycle, cold static decantation of the must, and subsequent separation of the lees. The clear must is fermented at a controlled temperature for 15-20 days and the wine matures sur lies for seven months.
Color: Bright straw yellow with brilliant greenish reflections.
Aroma: Immediately straightforward, impeccably clean, and elegant with a pleasant intensity featuring fruity and floral tones. Initially, there is a distinct perception of golden apple flesh, quickly followed by fresh notes of golden apple, Abate pear, and white-fleshed peach, as well as spring flowers (acacia, orange blossom, and hawthorn). This is followed by a pleasant perception of rocky minerality.
Taste: The initial taste is decidedly fresh, crisp, savory, and fruity, with a straightforward character. Then the wine opens up to a balanced complexity of pleasant taste-olfactory perceptions, continuing with significant notes of yellow fruit. The finish is persistent with a slightly bitter and almond-like aftertaste.
