Valpolicella Ripasso Classico Superiore DOC Casa Capitei
Casa Capitei is a 5-hectare, fully terraced estate situated in the picturesque hills of Valpolicella. The region boasts tuffaceous soil, clay, and limestone, which highlight the intricate relationship between the terroir and the native grape varieties that are a distinctive hallmark of the Verona area.
The estate's vineyards are at an average altitude of 300 meters above sea level. The soils are derived from the disintegration of calcareous-dolomitic formations and brown morainic basalts.
In January, Valpolicella wine undergoes a second fermentation for 12-15 days on the Amarone pomace, a process known as "ripasso," which enhances its structure, power, and fruitiness. This is followed by a 20-25 day maceration period in stainless steel vats, with frequent and gentle punching down to maximize aromatic extraction and minimize tannic harshness. The wine is then aged for 18 months in 20hl and 30hl European oak barrels, followed by at least 6 months of further refinement in the bottle.
Color: Flaming ruby red with fleeting garnet highlights.
Bouquet: On the nose, it opens with distinct impressions of well-ripened red fruit, particularly marasca cherry, then red plum, with hints of jam and light chocolate. Spices of pepper, vanilla, and cinnamon. Notes of undergrowth.
Taste: The taste is immediately enveloping, dry but harmonious and ample. Fruity, intense, and persistent, well-balanced on a powerful but non-intrusive structure. Ethereal with final hints of medicinal herbs.
Flavour: Delicious with braised or slow-cooked meats and cheeses. A valid complement to first courses with game sauce. Due to its balanced harmony, it is also pleasantly sipped during tasting.
