This Extra Brut sparkling wine is produced with the best Chardonnay and Pinot Noir grapes coming from vineyards located in the Veneto region in the hilly area of Montello and the Asolo hills, in the municipality of Nervesa della Battaglia and more specifically from the “Abbazia” estate vineyard located on the Montello slopes. Fermentation off skins. Short cold maceration of the grapes and primary fermentation with selected yeasts at a controlled temperature. Secondary fermentation takes place at a low temperature in autoclave with the wine remaining on the yeast or lees for approx. 6-8 months (long Charmat method) before bottling.Foam: appropriately evanescent, with fine and lingering perlage.
Colour: straw yellow.
Bouquet: intense, fruity, with hints of apple, bread crust and yeast.
Taste: good acid note as well as being creamy and round on the palate.
Excellent both as an aperitif and as an accompaniment for all important occasions.
